Culinary Manager

Our future Culinary Manager successfully…

  • Monitors and implements latest food trends and demands;
  • Leads the culinary head office team and ensures overall customer satisfaction and budget compliance of the services provided in our various business lines;
  • Spearheads the digitalization process of the administrative task assignments;
  • Supervises, supports and directs the operational on-site culinary teams;
  • Governs the galley operational manuals, menu cycles, recipe standards, operation procedures and resources;
  • Conducts on-site quality audits, reviews and trainings;
  • Ensures full compliance with nutrition requirements, sanitation regulations and safety standards
  • Cooperates with the Hotel Purchasing team to optimize the purchasing cycle to strive for the highest cost-efficiency for our clients;
  • Act as on-site backup for critical positions, if necessary;
  • Ensure culinary guest satisfaction in accordance to the desired service standards, set by our clients;
  • Fleet-wide responsibility for the galley equipment status and standards;
  • Participation in projects assigned.

Your experience includes:

  • Degree in Culinary Arts from a recognized institution or comparable on-the-job experience (e.g. apprenticeship with continuous self-education);
  • Minimum 5 year’s leadership experience in culinary arts in hotels and/or preferably on board cruise vessels;
  • Must be well-versed in modern and classical cooking techniques and simultaneously be innovative, having a pulse on current culinary trends;
  • Strong understanding and high proficiency related to food cost and general P&L principles and forms, proficient in operating cost control activities;
  • Proficient in training, supervising and evaluating employees;
  • Profound knowledge of HACCP, US Vessel Sanitation Program, EU-Shipsan and Marpol regulations;
  • Good communication-, leadership-, teamwork- and decision-making abilities;
  • Advanced culinary skills, with an outgoing personality and the ability to interact with different cultures;
  • Excellent command of English (written and spoken);
  • A team-player, supporting interaction with colleagues of other departments and partner companies;
  • Willingness to travel;
  • The ability to perform under pressure, “hands on” and flexible complete your profile.
